In 2016, Sheba and Kyle Barker opened Shimoji Coffee, a drive-thru only coffee shop in Vandalia, Illinois, to offer quality products and service that could brighten each customer’s day. Since then, Shimoji has expanded to a new location in Vandalia, and an extension at Greenville! At Shimoji Coffee, the syrups are handcrafted with pure cane sugar, the baked goods are made from scratch with fresh ingredients, and the beans are roasted in small batches weekly to ensure freshness.
